Apricot Chicken

Ingredients
8 skin-on, bone-in chicken thighs or chicken breasts
1/4 cup soy sauce
1 jar apricot jelly
1 onion, diced
1 bulb garlic, diced
1/2 teaspoon crushed red pepper flakes
1 tablespoon dehydrated onion
Directions
Preheat oven to 425°F. Lightly oil a 9x13 baking dish.
In a large bowl, combine the soy sauce, apricot jelly, diced onion, garlic, crushed red pepper flakes, and dehydrated onion. Mix until well combined.
Add the chicken to the bowl and coat thoroughly in the sauce mixture.
Place chicken thighs skin-side down in the prepared baking dish. If using chicken breasts, place them smooth-side down. Reserve any remaining sauce from the bowl.
Bake for 20 minutes. Remove from the oven, flip the chicken, and spoon the reserved sauce over the top.
Return to the oven and bake for an additional 25–30 minutes, or until the chicken is fully cooked and the sauce is caramelized and bubbling.
Serve warm over mashed potatoes or with roasted vegetables.
